If you don’t have a mold, you can pour the sugar mixture into tablespoons or teaspoons and insert toothpicks to make it convenient to hold the delicious candies.

Ingredients

In order to make lollipops at home we will need:

sugar - 6 tbsp. l.;

water - 2 tbsp. l.;

vinegar 9% - 1 tbsp. l.;

And now the most important thing: during the cooking process, the caramel CANNOT BE STIRED (!!!), otherwise it will “sugarify” and look like just very wet sugar, and then this sugar will harden into a bulletproof stone.     Pour water into a saucepan or stewpan and add granulated sugar. Heat the resulting mixture to 130 degrees. We check the temperature with a food thermometer, but if you don’t have one, take a little syrup and drop it into a container with cold water: the resulting drop should be shaped, but soft.

    Add natural flavoring (in our case, raspberries in syrup) and red food coloring. Mix everything thoroughly and heat it to another 150 (maybe a little more) degrees (this time a drop of syrup in cold water should become solid). Mix citric acid with water in a 1:1 ratio and add to the syrup. Mix everything again.

    On a silicone mat or baking parchment (flatten the latter so that it does not curl into a roll, and spread it lightly with vegetable oil), using a large spoon, first spread the caramel in a circle, but when it begins to harden, give it a heart shape. If the caramel starts to thicken quickly in the saucepan, put it back on the heat for a few seconds and it will melt (you can do this a couple of times).

    Do not spread the caramel mass onto the parchment all at once. Two round pieces will be enough, with a wooden skewer attached to each of them.

    Keep in mind that simply attaching a skewer is not enough. You also need to rotate it around its axis 360 degrees so that the stick is neatly immersed in the caramel (this is very important, almost the main secret!).

    Leave the finished lollipops to harden. And don’t forget to give them the desired shape in the process.

Place the pan on the stove and turn on medium heat. Cooking time depends on the amount of water and sugar. In the above case, if you took 300 grams of sugar and 100 grams of water, then the time is approximately 10 minutes. But in any case, make sure that your solution does not turn dark brown. And this can happen very quickly. Therefore, do not go to other rooms while preparing sugar candies, even for a short time. If the solution turns out dark brown, it means the sugar has burnt out, and the resulting candies will have a bitter taste. It is optimal to obtain a viscous mass of light brown color. When we get such a mass, we turn off the gas. You will need to pour our solution into molds that you have prepared in advance and rubbed with sunflower oil. For simple molds, you can use regular spoons. And we insert sticks - you can use toothpicks, matches, twigs as them. We used sunflower oil so that the sugar candies can be easily removed from the molds. Then we wait for the candies to cool down. And then you can have a good rest and suck on lollipops prepared at home.

To get different flavors for candies, you can add other ingredients to our mixture of sugar and water. For example, lemon juice, cognac, cocoa, apple syrup, etc.

When the syrup turns golden, heat it for another 20-30 seconds and then remove from the heat. The viscosity of the syrup should resemble office glue. To check, drop the syrup into a glass of cold water. If the drop has hardened, the syrup is ready. After removing the container from the heat, you need to stir the syrup a little more until the bubbles disappear and you can pour it into the molds.

To vary the color and taste of the candies, they can be made with milk, cream, fruit and vegetable juice; add cocoa and cinnamon to the syrup. 10 tbsp. spoons of sugar
4 tbsp. spoons of water
4 drops vinegar (or 1/4 teaspoon lemon juice)
