Salad “Gone with the Wind”

Shrimp (boiled) - 80 g

Lettuce (“Iceberg”) - 50-80 g

Nut Cabbage Salad

Cabbage 0.5 kg,

At this time, grind the nuts in a bowl (if you have a mortar, it’s better) with olive oil, you should get a homogeneous paste. Add orange juice to the finished mixture, stir thoroughly, add to the salad and mix.
Place the finished salad in a salad bowl, garnish with orange slices and herbs (you can use bell pepper).

MASTERPIECE SALAD WITH CHICKEN AND SWEET PEPPERS

Chicken - 200 grams;
Sweet red pepper (meaty) - 250 grams;
Green beans - 200 grams;
Chicken egg - 3 pcs;

Garlic - 1 clove;
Vegetable oil - 4 tbsp;

I prepare this salad for every holiday, and I will say without exaggeration that it disappears from the table very first, it turns out very tasty. And also beautiful, but for this the pepper must be red, not yellow and not green. Well, or multi-colored, as an option, it will also look beautiful! And this garlic aroma... Well, it’s definitely a masterpiece!

To prepare the “Masterpiece” salad, take chicken (fillet or leg), green beans, sweet red meaty pepper, garlic, vegetable oil, chicken eggs, mayonnaise and salt.

Boil the chicken meat in salted water and cool, then hard-boil the eggs and cool them as well. Boil green beans (I had frozen ones) for 3 minutes in highly salted water and immerse in cold water for 30 seconds, then drain the beans in a colander, let all the water drain to the last drop. Cut the sweet pepper into cubes and fry with one clove of garlic (chop it) in vegetable oil until soft. Transfer the pepper and garlic to a plate and let it cool.

Combine beans and chicken pieces in a bowl.

Add diced eggs and cooled pepper to them.

Season everything with mayonnaise, you can add a little salt to taste.

Mix the salad and put it in the refrigerator, let it sit there for half an hour, soak thoroughly.

That’s it - the “Masterpiece” salad can be tasted!

“ORGASM” SALAD (FOR THE HUMBLE - “DELIGHT”) The salad is simple and, indeed, very, very, very tasty. Meat salad with grapes

300 grams boiled beef
2-3 medium pickled or pickled cucumbers
300-400 grams of champignons
1-2 pcs. onions
a handful of light seedless grapes

Cucumber salad with mint

Brilliant salad!
Because it’s simple to the point of amazement, and delicious to the point of disgrace.
There is nothing in it except fresh, tasty, juicy cucumbers. And gas stations. But that's the whole point!
It's all about the dry mint!

4 cucumbers
2 cloves of garlic (our fresh garlic season has just begun!)
1 tsp dried mint (that's the secret ingredient!)
1 tsp good natural vinegar (wine, apple, rice)
2 tsp olive oil
salt to taste

What to do with all this:
1. Slice the cucumbers thinly, diagonally.
2. Grind the garlic with salt.
3. Mix garlic, vinegar, oil and pour over cucumbers.
4. Sprinkle with mint, stir, let stand for 5-10 minutes.

I want to say about DRY MINT: it has a different taste than fresh, it harmonizes wonderfully with legumes, and, as it turned out, with fresh cucumbers too.
I think it’s even easier to buy dry mint than fresh. But we have fresh ones on sale all year round!
And I know a great method for drying mint: wash, dry, wrap in a paper towel and leave in the refrigerator for 3-4 days. Get great dried greens.

SALAD NICOISE

Ingredients for 4 servings:

For refueling:

1 clove of garlic
2-3 sprigs green basil
60 ml olive oil
1 tbsp. white wine vinegar
salt and ground pepper to taste

For the salad:

150 g green beans
1 tbsp. lemon juice
half a medium red bell pepper
4 eggs
1 can of tuna in its own juice or oil
2-3 large ripe tomatoes (I used cherry tomatoes)
6-8 anchovy fillets
200 g salad mixture (I used romaine, corn, radicchio and frisee)
8-10 olives (I used kalamata olives)
1 small salad onion

We are preparing the dressing. Beat the oil and vinegar with a fork until emulsified. Add finely chopped basil and a crushed clove of garlic to the resulting dressing. Season with salt and pepper, mix and set aside.

Refueling

Boil the eggs hard.

Remove the tuna from the can and break it into pieces with a fork or your hands.

Fry the beans in olive oil until tender, add salt, pepper and season to taste with lemon juice.

In plates we put lettuce, fried beans, chopped peppers, thinly sliced ​​onions in half rings, olives, quartered eggs, sliced ​​tomatoes and anchovy fillets (can be cut into 3-4 pieces each, or put whole). Drizzle with dressing and serve.

liver cake

Ingredients:
600 g chicken liver
3 raw eggs (and 3 more boiled for decoration)
2 large onions
2 large carrots (plus 1 small boiled carrot for garnish)
250-300 g mayonnaise
3 tbsp. sour cream 20% fat
2 tbsp. refined vegetable oil
3 tbsp. flour
3 cloves garlic
parsley for garnish
Salt (1/2 tsp for liver dough, 1/2 tsp for frying carrots and onions)
Wash the chicken liver, thoroughly remove films and remnants of the gallbladder (green).
Usually the liver sold is of good quality and does not require grueling preparation, but it is worth reconsidering, because If you accidentally get hold of a remnant of the gallbladder, the bile can spoil the entire dish with its bitterness. Combine liver and raw eggs in a large bowl. Add 3 tbsp. fat sour cream. Add 3 tbsp. flour. Beat everything with a blender. Add 1/2 tsp. salt. Mix. Heat the frying pan (it must be clean and dry) thoroughly with 1 tbsp. l. oils
Just before frying the first pancake, you should grease it with oil.
In a ladle, you need to add a volume of liver dough sufficient for a thin pancake (3 mm) and completely cover the entire surface of the pan.
For my 20cm frying pan, I take 1/2 a ladle, pour it onto a well-heated frying pan and spread the dough over the surface in a circular motion. You need to fry the pancakes over medium heat, as soon as the pancake “sets” and begins to move away from the edges of the walls (after 1-2 minutes) and almost ceases to be pink, carefully pass the spatula under the pancake and, making sure that it does not stick anywhere, turn it over onto a raw side. Turn over in one confident motion. Even if the pancake is torn, don’t worry, finish frying it and place it among the layers in the cake - it will “camouflage” perfectly. Fry for about 1 minute more, turning over, or until browned. Chop the onion. Grate the carrots. In a frying pan, fry a mixture of onions and carrots over medium heat for 7-10 minutes. Add salt (1/2 tsp salt), pepper (1/5 tsp). Cool and divide into the amount required for each layer so that the frying is evenly distributed in the cake. There is no need to put the carrot-onion mixture on the last pancake, so if you have 10 pancakes, you need to divide the mixture into 9 servings. Peel the garlic and squeeze into mayonnaise. Place the pancake on a plate. Coat with 1 tbsp. mayonnaise with garlic. Distribute the carrot and onion frying.
Cover with the next pancake. This way we get a liver cake! To decorate as in the title photo you will need 3 boiled eggs.

Salad "Fairy Tale"

Ingredients:
Chicken breast - 1/2 pcs.
Mushrooms (champignons) - 200 g
Egg - 2 pcs.
Walnuts - 100 g
Onion - 1/3 pcs.
Parsley - 10 g
Sour cream or mayonnaise - 5 tbsp.

Preparation:
We clean and wash the champignons. We cut them. Fry the mushrooms in sunflower oil until golden brown. Salt. Let them cool. Cut the boiled chicken breast into strips. Place it on the bottom of the salad bowl. Drizzle with sour cream. Finely chop the onion. Lay out the onions.

- 1 can (350 g) canned corn
- a small bunch of fresh dill

2.Chop the eggs into a large bowl. Add corn and stir.
3.Slice the ham into thin long pieces and add them to the bowl.
4.Cut the pepper into strips. Peel the cucumber, cut it in half lengthwise and cut into thin pieces. Add everything to a bowl.
5.Chop fresh dill and add to salad. Mix everything, add salt to taste, then add mayonnaise and mix again.
